
Asiago Fresco. This fresh cheese is sold when it's only a few weeks old as opposed to the asiago we are more familiar with which is usually aged for 7 months.
This young cheese is softer and less salty than when aged. She is a smooth buttery tasting cheese that doesn't taste at all like the aged version.
Now, I'm off to New Hampshire tomorrow so won't have access to the shop. I do plan on visiting some other cheesemongers in the area and hopefully can get some posts up this week.
